Understanding Cooking Heat: When to Use Low, Medium, and High

If there is one skill that separates competent cooks from beginners, it is heat control. The wrong heat level is responsible for more cooking failures than any other single variable — more than ingredient quality, more than timing, more than technique. Food that burns on the outside while remaining raw inside, scrambled eggs that turn rubbery, sauces that stick and scorch, onions that never properly caramelise — all of these problems are heat problems. Understanding why different preparations require different heat levels, and learning to identify those levels by visual and auditory cues, is the foundation of cooking well.

What heat is doing to food

Heat changes food through several mechanisms that operate at different temperature ranges. The Maillard reaction, which produces browning and hundreds of new flavour compounds, occurs at above roughly 140°C at the food's surface. This requires a dry surface — moisture must evaporate before the surface temperature can rise above 100°C. Caramelisation of sugars occurs at 160°C and above. Proteins denature (unfold and set) over a wide range starting around 55°C for eggs and ranging up to 75°C and above for muscle proteins.

This means that the appropriate temperature for cooking depends entirely on what you want to achieve: do you want browning? You need high, dry heat. Are you setting proteins gently? You want low, moist heat. Are you cooking something through without browning the exterior? You want moderate heat with some moisture control. Most dishes involve a combination of these phases.

High heat: when and why

Use high heat for searing, stir-frying, and boiling. The goal of searing is the Maillard reaction: a deeply browned crust with the associated complex flavours. To sear effectively, your pan must be very hot — smoking hot for most applications. If the pan is not hot enough, the food steams in its own moisture rather than browning. Wipe the pan with oil rather than adding a pool of it; excess oil lowers the temperature by cooling the pan. Pat the food dry before searing. Do not move the food; let it sit in contact with the pan until the crust forms and it releases naturally.

Stir-frying also requires very high heat because you are cooking thin strips of food very quickly, and you want the vegetables to colour and char slightly rather than steam. Restaurant wok burners produce far more BTUs than home stoves; to partially compensate at home, heat your wok or pan over the highest heat for several minutes before adding anything, and cook in small batches rather than overcrowding.

Boiling water for pasta requires high heat to maintain the rolling boil that keeps pasta moving and prevents sticking. Once the pasta is in and the water has returned to a boil, you can often reduce the heat slightly to maintain the boil with less energy.

Medium-high heat

Medium-high is the workhorse setting: hot enough to produce some browning without the urgency of searing. Most sautéed vegetables, chicken breasts, pork chops, and pan sauces operate here. The food should sizzle actively when it goes in. If it does not sizzle, the heat is too low. If it immediately smokes aggressively, it may be too high. The ideal is vigorous sizzling that suggests browning is occurring without the acrid smell of burning fat.

When browning aromatics at the start of a dish — onions for a tomato sauce, garlic for a pasta — medium-high heat produces the Maillard browning that deepens flavour without the risk of scorching that true high heat carries. Watch carefully and stir more frequently than feels necessary; burning aromatics at the base of a dish is nearly impossible to recover from.

Medium heat

Medium heat is for gentle cooking where you want to develop flavour without aggressive browning: slowly softening onions until translucent and sweet (ten to fifteen minutes), simmering sauces, pan-frying eggs, making pancakes. The essential characteristic is that the pan is hot enough to cook the food through and produce some colour, but not so hot that the exterior sets too fast for the interior to cook.

Caramelising onions properly — the process of cooking sliced onions over medium to medium-low heat for 45 minutes to an hour until they collapse into a sweet, dark, jammy mass — requires patience and medium heat. The common mistake is cooking them on high heat and calling them done after five minutes; the result is softened onions that have not undergone true caramelisation. The long, slow cook at moderate heat is irreducible.

Medium-low and low heat

Low heat is for delicate proteins, slow emulsification, and maintaining without further cooking. Scrambled eggs cooked on low heat produce the silkiest, most custardy result. Hollandaise, béarnaise, and other emulsion sauces need the lowest heat because they break if the eggs get too hot. Tempering chocolate requires low, indirect heat. Cream sauces should be finished on low heat because high heat causes them to break.

When braising in the oven, 140 to 160°C produces the slow, gentle heat that converts collagen to gelatin without toughening the meat through vigorous boiling. The liquid should barely tremble — a bubble every few seconds. Oven braising is preferable to stovetop for large braises precisely because the gentle, surrounding heat of the oven is easier to control and more even than a stovetop burner that heats only from below.

How to judge heat without a thermometer

Professional cooks learn to read heat by observation and sound. For a pan: hold your hand a few centimetres above the surface — high heat will feel very hot from this distance; medium should feel warm; low should feel barely warm at all. The water drop test: a drop of water flicked into a hot pan should sizzle and evaporate immediately at medium heat; dance in distinct spheres (the Leidenfrost effect) at very high heat; and merely pool and slowly evaporate at low heat.

The sound of the food is equally informative. A vigorous, aggressive sizzle and spatter suggests high heat. A steady, moderate sizzle is medium to medium-high. A quiet, gentle sizzle is low to medium-low. No sizzle at all means the heat is too low or the pan is not yet hot enough — for most applications, food added to an insufficiently hot pan will steam rather than sear and stick to the pan before a proper crust forms.

Carryover cooking

Heat continues to work in food after it is removed from the heat source. A steak removed from the pan at 50°C internal temperature will continue rising to 54 or 55°C as the exterior heat migrates inward. This carryover is more significant in larger cuts — a whole chicken breast might rise 3 to 5°C after removing from heat; a large roast might rise 5 to 8°C. Account for this by pulling food from the heat before it reaches your target temperature.

Residual heat in the pan also continues cooking. This is why scrambled eggs should be plated while they still look slightly underdone — they continue setting on the warm plate. Sauces removed from heat continue reducing from the heat of the hot pan. Remove, plate, rest, and let carryover finish the job rather than trying to cook everything to its final state over the heat source.
