The Perfect Chocolate Chip Cookie: What Recipe Sites Get Wrong
The internet has no shortage of chocolate chip cookie recipes claiming to be "the best" or "the last recipe you will ever need." Most of them are variations of the same basic formula, differing mainly in the ratio of butter to sugar to flour, and most of them produce a perfectly acceptable cookie. But acceptable is not the same as excellent, and understanding why cookies behave the way they do is the difference between following a recipe and actually baking.
What most recipes get wrong
They skip browning the butter
Melted butter produces a denser, chewier cookie than creamed butter. But browned butter — butter cooked until the milk solids toast and turn nutty — produces something fundamentally different in flavour. The Maillard reaction creates hundreds of flavour compounds that cold or merely melted butter cannot match. Every chocolate chip cookie recipe that calls for melted butter without browning it first is leaving the most important flavour upgrade on the table.
To brown butter: melt it in a light-coloured saucepan over medium heat, swirling occasionally. It will foam, then the foam will subside, and you will see golden-brown bits forming on the bottom. At this point it smells like hazelnuts and toasted caramel. Pour it immediately into your mixing bowl — it will continue cooking in the pan if you leave it — and cool for 10 minutes before using.
They do not rest the dough
Resting cookie dough in the refrigerator for at least 24 hours, and ideally 48 to 72 hours, does several things. It dries the dough out slightly, which concentrates flavour and reduces spread. It allows the flour to fully hydrate. And it gives the sugars time to break down in ways that produce more complex caramelisation during baking. A cookie baked from rested dough is caramel-coloured, complex, and deeply flavoured in a way that same-day dough simply cannot replicate.
This is not a marginal difference. It is the most significant single improvement you can make to your cookies without changing a single ingredient.
They underbake
The instinct to pull cookies out of the oven while they still look underdone is almost universal, because underdone looks overdone before it cools. But a cookie that looks perfectly golden and set in the oven will be rock hard when it cools. Pull cookies out when the edges are set and lightly golden, but the centres still look slightly underdone — almost raw. They will continue cooking on the hot baking sheet for several minutes after you remove them from the oven. This is carryover baking, and accounting for it is the difference between a cookie with a crisp edge and soft, slightly gooey centre and a cookie that is uniform and disappointing throughout.
The recipe
This recipe makes 16 to 18 large cookies.
- 225g unsalted butter
- 200g dark brown sugar
- 100g white caster sugar
- 2 large eggs plus 1 egg yolk
- 2 tsp vanilla extract
- 280g plain flour
- 1 tsp bicarbonate of soda
- 1 tsp fine sea salt
- 300g good-quality dark chocolate, roughly chopped (not chips)
- Flaky sea salt for finishing
Why these specific ingredients?
The extra yolk adds richness and fat without adding water, which promotes chewiness. Dark brown sugar has more molasses than light brown, which means more moisture, more flavour, and more chew. Using chopped chocolate rather than chips means irregular pieces that pool and puddle differently, creating a range of chocolate intensity throughout the cookie.
Method
Brown the butter as described above and cool slightly. Whisk in both sugars until combined — the mixture will look like wet sand. Add the eggs, yolk, and vanilla and whisk vigorously for about a minute until the mixture is slightly pale and ribbony. This step dissolves the sugar and builds a little structure.
Fold in the flour, bicarbonate of soda, and salt until just combined. Do not overmix — a few streaks of flour are fine at this stage. Fold in the chopped chocolate.
Cover the bowl and refrigerate for at least 24 hours. When ready to bake, preheat your oven to 190°C and line two baking sheets with parchment. Scoop balls of dough about 60g each — roughly the size of a golf ball — and place them well apart on the baking sheets. Press a few extra pieces of chocolate onto the top of each.
Bake for 11 to 13 minutes until the edges are golden and the centres still look slightly underdone. Immediately after pulling them from the oven, sprinkle with flaky salt. Leave on the baking sheet for 5 minutes before transferring to a rack.
Variables worth understanding
Flour: More flour means a thicker, cakier cookie. Less flour means more spread. This recipe is calibrated for a cookie that spreads moderately and has a soft, chewy centre.
Sugar: More brown sugar means chewier and moister. More white sugar means crispier and more spread. Adjusting the ratio lets you dial the texture in either direction.
Butter temperature: Room temperature creamed butter traps air and produces a puffier, cakier cookie. Melted or browned butter produces a denser, chewier one. This recipe uses browned butter for maximum flavour and chew.
Oven temperature: Higher temperatures (200°C plus) mean faster baking, more spread, and crisper edges. Lower temperatures (175°C) mean a slower bake, less spread, and a more uniform texture throughout. 190°C is a good middle ground.
Chocolate quality: This matters more than almost any other variable. A chocolate you would happily eat on its own will produce a dramatically better cookie than baking chips designed for their melting point rather than flavour. Use chocolate with at least 60% cacao.
Storing and freezing
Baked cookies keep in an airtight container at room temperature for up to 5 days. To maintain softness, add a slice of bread to the container — the cookies will absorb moisture from the bread rather than drying out.
Cookie dough freezes beautifully. Scoop portioned balls onto a baking sheet, freeze until solid, then transfer to a bag. Bake from frozen at 190°C for 14 to 16 minutes. You can have fresh cookies in 15 minutes at any time, which is reason enough to always have dough in the freezer.
